I use this one virtually every time I'm at the lease. It's great.
1.5 - 2lbs Pork shoulder or tenderloin, cut into large chunks
1 26oz can crushed tomatos
Chipotle powder to taste
Salt & Pepper to taste
Put it in the crock pot and cook as long as you want. It will fall apart when removed. Serve on warm tortillas with black beans and some queso fresco or cheese of your choice. The leftover liquid is great on rice too.
