    July 4th Smoking

    What do we have on the pits boys?

    Headed down to Cedar Creek in the morning to a buddies house. The family has been incredibly kind and invited me many times over the years, so I’ve got a wagyu brisket from snake river farms on the smoker to feed them and thank them.

    Gonna do smoked queso and Smart’s baked beans in the morning and then head south!

              I put a brisket on at 9:30 tonight... Got a couple racks of ribs I'll start tomorrow, then just before dinner, I've got some quail jalapeno poppers for appetizers...

              Will do the veggies on the griddle except for the fried green maters...

                Big pits are way easier to cook on. Been cooking on it for 20+ years and I know it's tendencies and know how to hold temp perfectly on it. When I spend that kind of money on a brisket, its going on my stick burner that I know I can use well. And it barely uses any wood once up to temp.

                Also have the queso and beans going on the same pit tomorrow.
