    Do i cut the muscle with the grain or against?

    Across the grain.....but I've done it both ways.

      Depends on how tough you like it. Cut against the grain will make it more tender.

                i cut with grain because I like it tougher. so yes like said above at least once depends .

                    It’s hard to get right but my favorite is cut the way not mentioned and it’s hard to explain but it’s the best of both worlds the jerky is not sliced thin across the grain nor are the strings of meat going longways with the strip of jerky instead they run across the width of the strip of jerky. (Think 1 inch steak cut across the grain then sliced into thin strips)

                      exactly.... I like mine with some chew so I cut with grain.

                        With the grain is a chore to chew in my opinion (TMJ issues). I just thick cut it across the grain and it's still chewy but I can eat a bag without killing my jaw.

                          So what I did was cut across the grain then ran everything through my tenderizer 2 times. The texture is perfect.
