Ive never seen a chicken sausage recipe that I can remember. I saw some in a store a while back and threw some on the smoker. It was actually very good and a lot healthier too. Id buy it again, but I havnt seen it since. I guess it wasnt a big seller.

You want to use all thighs, chicken or turkey. I prefer boneless skin on thigh meat. You need the fat to make the sausage not come out dry. Breast by them self will not have enough fat to make a good juicy sausage. Skin on thighs will be around 13% fat. If you want to make it leaner you can do 50/50 skin on thigh and skinless breast or skinless thigh, or skin on thigh.
