    Venison Roast with Jager sauce

    Full sirloin muscle rolled in peppercorns, kosher salt, and garlic. Seared on cast iron in bath of butter. 250 in the oven till IT of 122. 10 min rest. Money.

              In the 10 min it sat it would have gained another 8-10 degrees putting it right where it should be.
