    Cordoba, Dove Pasta....worth the time, I PROMISE

    Ingreds:

    Bones skinned breast from 16-20 dove

    Salt and Pepper

    2 T olive oil

    1/4 lbs bacon

    1 med onion, white or yellow

    3 garlic cloves minced

    2 T sugar

    1 1/4C chicken broth

    1/3C tomato paste

    1 1/2 C tomato sauce

    2 bay leaves

    hand full of mushrooms

    1 T butter

    Directions:

    Season dove with salt and pepper to taste

    Heat oil in stock pot over med high heat and lightly brown bacon (minced into small pieces)

    add dove and brown on both sides

    Then add onion and garlic and cook till transparent

    Add all next 5 ingredients, and simmer for 1 hour, stir occ

    add mushrooms and cook another 30 min

    remove half dove and shred with two forks

    return to mix and stir in then add butter till melted

    serve over pasta, topped with parsley

            Thats what i started to use but ran out last week. Id add 15-20 min to cook time
