Martini knives have held up for me cutting up pigs. I get about 3-4 pigs on them b4 I grab another one. Got 4-5 of them that I rotate out and then sharpen all at once. Think I paid $15-25 each from Amazon.

Got one of these and it’s ok. I do like the Mora knives though. Lots of knife for $10. I have several of them in different lengths. Easy to sharpen and hold an edge pretty well too.

Mercer culinary 6” boning knives. $8 each off Amazon. Keep several sharp and ready. I skin, bone, and process everything with these.

Another vote for Havalon and spare blades. If you haven't tried one it's essentially a folding scalpel and every blade is razor sharp.

Bought one last year. I won’t buy another knife as long as these are around.

Havalon here too! Plus a clean Sawzall blade for cutting bones.

Havalon/Outdoor Edge (Ford/Chevy) and a sawzall will put a deer in in the ice chest in 20 minutes or less.

I have gone strictly to Havalon knives. I love the Piranha!
