    Best wing I ever ate.

    Half a chimney of hot coals dumped on the far side of a charcoal grill on top of 4-6 inch chunk of desired wood. Offset lay extremely lightly seasoned chicken wings largest bone end towards the coals as far away as possible leaving gap. Close lid with vents wide open. Will start in the low 400s burning down. Check at 1.25 hours and pull when as crispy as fried.

    Served here with Alton Browns Buffalo recipe and ranch.

            I can do 2 dozen on my weber with consistency. Anymore and you probably would have to rotate and feed the coals.

              Alton Brown is great. I use his Gumbo recipe. Have to try his Buffalo sauce.

                              My wife makes me cook wings about every other week. Very similar recipe, the main goal is that CRISPINESS.
