Foil or butcher paper on the second brisket?
        Looks terrific

So far I've only used foil for the crutch.
I like the way they are turning out, so I'll stick with it for now.

          Edit:
          And Thanks.

Good job sir! If you ever want more bark just leave them longer before wrapping! They look money though!

                  Thanks.

Yeah. These were real small, and cooking real fast even when I turned the heat down.

That first one I did was a 17#er, and was actually easier to smoke than these two small ones were.

Finally shot a small pig, and got to try my hand on some wild pork in the smoker.

Two 5 lb hams, and two 1 lb back straps.

I used a little to much cyan pepper, but other than that it turned out great.
                      A little spicy, but delicious.

Looks good. Try basting the pork with Italian salad dressing and wrap in foil and cook till falling off the bone tender.

I injected this with pineapple juice, then also soaked it in it overnight.

                          It's very tender, and juicy.

Oh don’t get me wrong it does look good. I just like to finish the pork off after smoking wrapped with the salad dressing. Really gives it a good flavor and the muscles will start separating exposing the bone for pulled pork tenderness if wanted to shred.

I may try that next time.

Nice, you turned that small pig into something that looks real tasty.
