    Wild Turkey leg carnitas

    If y’all are like me you’ve likely left plenty of turkey legs in the woods for the buzzards. No more! Tonight did carnitas in the instant pot and holy smokes they were good.

    Set the instant pot for 90 minutes. Use 1 cup of chicken stock as the liquid. Season turkey legs to taste. Add lime juice, garlic, old bay seasoning, bay leaves, onion, and a couple chipotles in adobo. After it’s done cooking pick the meat off the bones. Add seasoning if necessary. Next sauté pulled meat in butter in a cast iron skillet. Once it’s browned add a little of the cooking liquid back over the top. Serve on warm tortillas with cilantro and a squeeze of lime juice

        This is the best way to eat turkey legs and thighs. Can't believe I used to leave the legs in the field.

                      I'm making this if I kill this year. Ive been deboning mine for a couple of years now and mixing wirh a little bacon for breakfast sausage.

                        I can testify to the greatness of wild turkey leg carnitas. I use Hank Shaw's recipe. It's a winner. The OP's recipe sounds awesome. Might try that this season.
