    Smoked Cheese

    I took advantage of the low temps and smoked some cheese today. If you liked smoke cheese its super easy to do and I think it tastes great.

    I use a smoke tube off Amazon filled with pellets that I use in my Recteq. Smoke about 4 hours then let rest before vacuum seal. Hardest part is you have to let it Mello in the fridge for a couple of weeks. Trust me don't eat it right off the smoker.

                  I use the same smoke tube as you.

                  What are the little mats the cheese is sitting on?

                  I put mine directly on the grates and as long as it is cool outside the cheese doesn't melt.

                    Thats actually just butcher paper, same thing some people wrap a brisket in. I mainly use them just so I can write down which cheese is which. I am smoking Mild, Medium and long horn cheddar today.

                            So you just use the pellet tube and leave the grill off?

                            Been thinking about doing this for a while. Probably order one of those tubes and give it a go.

                            Can you put in ziplocs to set in fridge and mellow? Or what are y'all doing with it?

                              After I smoke it I let it sit out long enough so that it looks dry then I vacuum seal and put it in the fridge for a couple of weeks. Whatever you do don't eat any right after you smoke it, it needs time to let the smoke mellow.
