Most likely mustard. If you spread mustard on before seasoning it’ll hold the seasonings and cook away. You never taste the mustard.

It's butter mixed with thyme Rosemary smoked paprika coarse salt and coarse ground pepper.
The brown liquid is a little bit of liquid smoke.
