        Here is few recipes I would look at.

        The BEST recipe for Smoked Fish Dip in Florida! Make it a day ahead so the flavors will marry! Delicious with pickled onions and jalapenos!


        Florida’s smoked fish dip is typically made from amberjack or mahi-mahi, but for the taste of “old Florida” smoked mullet dip is it.

              Gave the recipe to Waterdog, he will be posting it up for all.

              Any recipe with Old Bay, capers, or crackers in it, is not an authentic old Florida smoked fish dip recipe. I can assure you of that, and most don't use any celery either, it isn't tuna salad. lol
