    You can but at 19-21 days I usually don't, it melts off like butter when you throw it on a hot fire.

            For those that have done this, can you vac seal em and freeze after aging?

              One week in. Meat is starting to darken and draw up some. The fat is starting to flake . The salt blocks are really pulling the moisture out.
              I suspect next week will really show some changes.

                      Home depot has some, but they're small and have glass shelves. I bought this one off of amazon. Kinda pricey, but perfect size.
