Came up with this by accident because I was too lazy to go to the store. It's low carb...but not really low calorie. We've added it to our semi-weekly menu during the busy week:
Skillet
4 chicken breasts (thin cut preferred)
Olive oil
Jar of alfredo sauce (I like Newman's)
8 oz tomato sauce
Fresh spinach leaves
Blackened Seasonings (I use Zatarains):
Garlic Powder
Crushed red pepper
Salt
Pepper
Put enough olive oil in skillet to cover the bottom and turn on Medium high/high.
Cut up chicken breasts into bite sized strips.
Coat heavily with Blackened season and add to skillet.
Cook/stir until done (don't overcook, dries it out)
Add the Alfredo sauce and tomato sauce and stir.
Add garlic powder, crushed red pepper, salt and black pepper to taste.
Cook until it's simmering and then add a big handful (or two) of chopped up fresh spinach leaves.
Cook until the spinach wilts and is soft.
Serve immediately.
Lick your plate.
