    Wild hog in instant pot

Shot a 75ish lb hog last week. Thinking about throwing it in the instant pot for about a hour and a half. Anyone else do this? Maybe throw a beer and some chicken stock, maybe some bbq in there with it?

    Thanks

    Mike

                Yes.
Go with your recipe Mike. Itll be Awesome!

Id add garlic, onion, salt, white vinegar (skip bbq sauce...too overpowering of meat IMO) and make sure meat is submerged entirely. Serve as chunky soup with rice and whole leaf spinach and juices. Num num.

If your worried about a tough cut or funky flavor...blanch and brine. Pour off brine except a smidge and reduce salt added to your final recipe.

                Good luck whatever you do...Mike

                God bless!

You must have a massive instant pot...

I ended up throwing a orange, 2 limes, half a onion and a angry orchard apple beer all in the with it. Probly about 5lbs off of a hind leg, threw in some chili powder, cumin, paprika, salt and pepper. Added chicken stock to fill up to the top of the meat. Put it insta on saute first and seared all the pieces first, then added everything and put it on high for 45 minutes. Turned out pretty good in some tacos.

That would be a yyyyuuuuuugggggeeeeee instant pot, unfortunately its normal size so I just used a hind leg.

i've done hog legs in the smoker for a few hours, then debone and put in the instapot for another hour or 2. i prefer to smoky flavor to remove any gamey taste but you can't beat the instapot to make it tender. you can use any number of liquids for flavor and moisture in the instapot.
