    Deer Tenderloin ?

    What’s best cheese to stuff with?
    Thinking of jalapeño pepper jack
    Gonna stuff & bacon wrap
    What internal temp for a good “medium” cook?
    I’ve seen tips to pre cook bacon slightly instead of wrapping directly raw
    Using charcoal grill
    Other tips?

    I do cream cheese. Cheddar type cheeses are too greasy and don't melt good.

      When I did mine I didn't pre-cook the bacon and it turned it turned out great but I put all the charcoal on one side and cooked it on the other side indirect. It was still juicy and not dry. It wouldn't hurt to pre-cook it some. I would definitely use some fresh jalapeños in it. I used cream cheese and some kinds 3 cheese Mexican blend.

            130-135 for a good medium

            Precooking helps or get thin cut bacon

              Not bacon wrapped, but we seared some on the Blackstone at the lease last weekend. Olive oil, Killen’s S&P blend, then seared with bacon grease. It was out of this world.
