Tender and great flavor
I only used kosher salt, cracked pepper and a light sprinkle of uncle Chris steak seasoning
Seared on high and finished in butter

My results have been the same! Fantastic. I cut a pocket in the steak and fill with black peppercorn and blue cheese. Sear on each side and finish with salt and garlic butter. I'd put it up against any deer backstrap.
