    Prep work done… will post pics once cooked later…

    Hatch peppers stuffed with brisket and a couple with cream cheese; wrapped in some “skinny” bacon had some cheap bacon in the freezer so I figured this was as good a use as any and obviously better than no bacon.

    You're right: bad bacon > no bacon

      Looks great.

      I actually prefer cheap, thin bacon for this kind of stuff. Poppers, etc. I feel like it crisps up before meat is overdone (past med-rare).

                    Yes Sir those Hatch peepers are great… I can’t find them often down here in Del Rio. HEB has them now.


                    I am getting a late start on dinner tonight. Just got the fire going so it’s going to be a bit.
