Default Camera recommendation

I am trying to reimagine my camera situation. Too much stuff and Iím hard on equipment. Sony Handicam , canon 50D and a GoPro. Canon lenses and mirror in poor condition, to many changes in the sand. My daughter suggested pairing down to an IPhone 10 or 12, possible the pro version. Hers takes incredible pictures. Hate not having a view finder , canít see the screen in bright sun and I like my 5SE because it fits in my pocket, however the pics pale in comparison to hers. Would like to be able to zoom well, stop action, manage exposure and video but without so much stuff. Any ideas?

If you just want a cell phone, my Samsung S21 Ultra's camera is significantly better than my wife's iPhone 10. It's still not as good as my Canon 6D, of course. But it's not a huge difference.
