    Knife recommendation needed

...for kitchen meat processing/deboning knife for wild game meat. Mainly for deer & elk meat.

I’ve used my field skinning/caping knives & also kitchen steak knives but thinking something better is out there

    Thanks in advance

      Filet seems right...precision

I also see boning & breaking knives...where do they come into play?

I like my Forschners. Wenger makes some good knives as well.

I use the ceramic knives from HEB. 1 6”and 1 I believe 3”. Best knives I’ve ever had. Never get dull. I’ll break 1 about once a year, but stay sharp and work flawlessly.

This one rocks. Stiffer than a typical filet knife but the blade shape is perfect for precise cutting, removing silver skin, etc.

Do you guys prefer a flexible or stiff bladed knife?

Victorinox semi stiff boning knife is tuff to beat and easy to sharpen. After I break an animal down it is the only knife I use to debone and trim. Easy to find. On Amazon

I’ve processed a lot of game with a knife like this one.

                        It is a good knife.

Holds an edge pretty well, easy to tune with a butcher steel.

The handle doesn’t get too slippery either (or at least the one I always used didn’t)

When I was young, it was a family event, to process everyone’s deer all in one day. Usually late January. Grandpa had a big freezer, and our deer quarters would hang until then. Sometimes there would be 20 deer. I spent a lot of time boning out and cubing meat for the grinder.

I went to the woods because I wished to live deliberately...

I have Bubba Blade that I use at home. Very sharp and stays that way.

Dexter Russel 6” boning knife with sanisafe handle. 1 wide blade/stiff for 90% of it...and a narrow flex for the rest. Cheap, durable, sharpen easily and have a great handle ... been using the same exact knives for a long dang time. Love the handle
