    What’s for dinner? WPTs

    Wild pig tacos. Trying to clean out the freezer so put some 25 pounders on the smoker today. We’ll be eating WPTs at work for a few days and the staff will love me again!!

            I’m probably doing a red deer tenderloin and some cheater beans


            What was the process on the pigs? Season and cook to 165 IT then sauce and pull?

              I season and smoke around 225 for 2 hours while spritzing until muscles start to separate and then wrap and leave for 2 more hours and then it’s falling off the bone.
