Just use a dip net and a shingle scraper on the docks, bring your screwdriver, tabasco, and horse radish. They are free.

The general oyster season in Texas historically has always opened on November 1st and has normally closed on May 1.... whether or not it will “open” is still in the air and probably will be voted on in the next few weeks, several factors as to why or why not is still at play, lease holders(Galveston boys) are not affected by any changes, HB 1300 was passed a couple years ago which allows for a person or entity to apply for a lease to grow (mariculture) oysters, I helped initiate the bill and was extremely excited to become involved with the permitting process, then Covid hit, I did not want to invest in any new venture in a market(restaurant) that seemed volatile at the time, as of today, there are 3 permits issued, and currently several more seeking permits. I will be applying for my permit in the next few weeks for East Matagorda Bay, farm site will be west of Old Gulf cut approximately 2 miles down the north shore, total site will be 5 acres....I will list the exact GPS coordinates for public comment . The oysters raised will be for the half shell market only, I will take broodstock from the bay to a approved hatchery where they will be spawned ...... the result will be a Triploid oyster which is sterile and has an extremely high growth rate, since no energy of the oyster is spent in reproduction, the oyster will be “fat” even in the warm summer months , I’ll keep any interested party informed, hoping to pair up with several oyster bars to sell the product

I love eating them and if your aquaculture business can supply them to places across the state, Im happy for you to be setting up shop. Good luck on your venture and keep us posted as to how it goes.

No beans. If you add beans it becomes oyster soup.
On PEI I ate the fresh blue mussles...man they were good! Our fishing guide made them while we were fishing for bluefin. They don't cost a lot there but here in Texas they ain't cheap no mo. Last edited by RiverRat1; 08-03-2022 at 08:46 PM. |

It seems to me that the gulf oysters have an oily taste to them. Maybe it is just me but the Atlantic ones taste better.

Best kept secret is Atlantic Oyster Company oysters at HEB. 10 oz. For 8.00 dollars. Or you can buy local Jerry’s Oysters from Smiths Point. 8 oz for 13.00. That’s 26 dollars a lb. Thanks but no thanks on local thumbsize oysters.

I never knew there was a difference until I was in a DC restaurant that had an oyster menu. I was stationed at Hurlburt Field at the time and the big honkin oysters around Ft Walton and Destin were 5 Cents each oyster shucked during happy hour. The oysters on the menu in DC averaged $50 per dozen and this was in the eighties.

The problem with gulf oysters is marketing. You need to come up with a good, identifiable brand for your product Lee. Something other than "gulf oysters". You see how they do it elsewhere in the US. Do that. Pick a local place name and turn that into your oyster brand. Build the image and market it. The perfect tides, perfect salinity, long growing season all come together to produce a superior oyster, etc, etc.
Hurry up and get it going. I need some new structure over there to fish. |

This isn’t gonna improve untill Louisiana resources are healthy and season can reopen at full capacity and keep the boats working in LA. What happened is when LA was shut down last year all the boats came to Texas and completely wiped out the oysters within days. Private reefs are still producing with very high demand yielding high prices and small oysters to meet the demand.
