This is a recipe for droewors or dried sausage fairly common to Southern Africa.
Its a staple around safari camps and I wanted to see if I could make it with a dehydrator and jerky gun. I wanted to give it a little apple wood smoke with kentucky bourbon rather than brandy for little different style.
The end result turned out awesome and quickly realized the casing was not needed if used with a jerky gun and dehydrator. The video link contains the recipe and conversion from metric.
