    CF-Deer Heart

    Son shot a buck yesterday evening and the heart was intact. Lung shot.
    Anyways kept heart on ice all night. I believe heart should be eaten fresh never froze and the same day or the next is fine. Cleaned out and cut up heart into strips, then tenderized with mallet. Deer heart is a dense cut of meat and I like to tenderize it. seasoned with Ragin Blaze. We use the hooters hot wing flour its light and works great with this. Season flour with salt, pepper, and blaze. Egg wash flour and fry. Serve on a biscuit with scrambled eggs and gravy or open faced on a biscuit both are good. Enjoy
