Well I got me some fried chicken for supper, wasn't homemade in a cast iron skillet but we got us a mom&pop greasy spoon here in town that turns out fried chicken good enough to fix a craving!

I always do it in a cast iron. 95% of the meals in our house are in a cast iron skillet or grill/smoker.
Thanks for the tip about turning it way down and covering. I struggle to get the inside meat cooked without over browning the skin. I’ve been just doing it in the skillet until the skin looks right, then putting them on a rack in the oven until they hit 145, but it looses some of the crunch/grease. Pouring a splash of grease over it at the end wasn’t a good experiment either.
