    Cheesecake




    Made a really great NY style cheesecake for my wife's birthday this week.

    NY Style Cheesecake
    (For 6” springform pan in an air fryer)

    Crust:
    Box of individually wrapped Lorna dune cookies (minus two packages)
    ½ stick melted butter
    ¼ cup brown sugar
    Pinch of salt

    Filling:
    18oz softened Philly cream cheese (2 & ¼ Pkg.)
    Teaspoon vanilla
    2/3 cup granulated sugar
    ¼ teaspoon salt
    ¼ cup sour crème
    2 large room temp eggs

    In a food processor pulse cookies then add in butter sugar and salt and pulse to combine
    Line 6” springform pan with parchment paper on the bottom and on the sides
    Press cookie mix into the pan and partway up the sides.
    Bake in air fryer at 350° for 3-4 minutes then allow to cool

    Wipe out food processor and add in crème cheese, vanilla, sugar salt and process to combine
    Add sour crème and eggs and just combine. Don’t whip air into batter.

    Pour batter over crust, tap to level and bring bubbles to the top, cover with foil and bake at 300° for 30-35 minutes
    Remove foil and cook additional 15-20 minutes
    When the time expires allow to remain in air fryer for an additional 30 minutes
    Cool on counter for 1 hour
    De-pan and cover loosely with plastic wrap and refrigerate for 3 hours minimum.

    Blackberry coulis
    4 half-pint baskets of fresh blackberries (1.5 pounds), rinsed, drained
    2 to 3 teaspoons fresh lemon juice
    1/3 cup sugar, or more to taste
    Combine ingredients in a saucepan and heat to a bare simmer.
    Mash berries and stir constantly for 5 minutes
    Pass through a fine sieve
    Allow to fully cool in the fridge to thicken slightly.

                      could this be made in the oven instead of the airfyer? What would the time and temps be in the oven?

                        You could google the traditional method and use this recipe and I think it would turn a okay.
