What to do with Pronghorn meat

Texantax and I killed a couple over the weekend in New Mexico. What’s the consensus on table fare and what to do with the meat.
    Thanks in advance

I think pronghorn is better than whitetail and as good as elk or axis deer. Cook it how you would do any of those.

It's amazing meat. I did kabobs last year and a fondue. Cube it and marinate it for a couple days. Amazing meat.

We made a lot of sausage with it, it's pre-Sage'd!

I didn't think I would like the steaks but it worked out pretty good and I'd put them equal with WT. I also thought the two Aoudad I've killed tasted fine too though, so ymmv.

These were bucks and does (I guess doe would be plural for doe), all from Wyoming over the course of several years.

Mine from NM was good, but mine from Dalhart in the wheat stubble and corn was the best ever.

Killed a lot of speed goats and made jerky out of all of them. Now, my brother thinks they are awesome, I do not, taste like a jackrabbit to me.

Every one I ever killed was guarded jealously and never shared with company. If they want antelope, let them kill one their damselves.
