na, no foul here. if that's what you got, you gotta dance with who brung ya.
The electric one should work better than the propane one I had. It sucked!
It worked fine except the propane heating the wood chips.
The chips would catch fire and burn up real fast. Refill, repeat.

Meat usually turned out good but was just a lot of keeping up to do.

I inherited one of those and I like it for the convenience but it doesn’t put out much smoke. Mostly just steam. I prefer my stick burner for the good smoke. Sinner? Not even close, just enjoying the convenience of modern technology.

No sinning going on that I see, just go with what ya got. If it's easier for you to learn or start out that way so be it. Not everyone can or wants to deal with a stick burner. I prefer whatever I have and is most convenient for the time I have to do it in.

People often over-smoke stuff in their smokers and that's all you can taste. Pull that wood off about halfway through and let it finish with low heat.

Of course, after the first 3 pan fulls burned, the last pans were soaked for only half an hour or so.
I even went so far as to put an expensive needle valve in gas line to be able to turn the flame waaaaaaay down. better, but no banana!
I wasn't born yesterday. That was 25376+ yesterdays.

Well someone said the chips catch fire and burn up too quickly. That’s why I said use chunks. Of course chips are gonna burn up quickly.

I would normally only run the gas enough to get the smoke rolling and then turn it all the way down or even off. I also would usually put the chinks in a pan or cast iron skillet to keep the direct flame off the wood.

Cutting across the grain makes for a better easier chew. Have you ever had a beef fajita cut with the grain versus across it? Even with something as tender as backstrap or beef loin we cut across the grain versus with it.
