Made this last night. I'm eating it right now, along with homemade scallopped
potatoes. Yum yum yum, delicioso!
What you need:
Ham steaks (about 3/4 to 1 inch thich)
3 cups flour
salt -n- peppa
3-4 Tbls bacon fat (manteca or shortening)
1/2 good size purple onion chopped
1 1/2 cups of milk
What you do:
Use a tenderizer mallet, or something fun, to beat the seasoned flour into the
steaks, pounding them thinner. Do a good job here, and you'll end up with a lightly crusted steak.
Melt your fat on high heat, and cook the steaks only two to three minutes on
each side. Remove to a warm plate. Cook the onion over medium heat until
soft, about two minutes. Stir in the remaining flour, and cook for another
minute or two. Slowly add the milk, stirring constantly until the gravy gets
thick, again, about two minutes.
