      You can also add a Can of Beer to the water for the beans to cook in.

        charro beans made easy

        In a large pan fry up 1# bacon cut in small pc.
        add 2 tomatoes
        med onion
        1 jap. pepper
        let all of the above cook with bacon
        add 2 large cans or 4 16oz of bush beans
        till bean start to boil a little
        top with cilantro let stand 5min
        your done
        make sure you cook dn the bacon but not to crisp

          My recipe is sort of un orthodox.

          1 packet of bacon (if you like bacon add more)
          1 onion (I prefer big chunks)
          2-3 tomatoes chopped
          Celery chopped (2-3 stalks)
          baby carrots (I'm not too big on carrots, but about 15-20 baby carrots chopped)
          2-3 (or more) cloves of garlic crushed
          1 bunch of cilantro, chopped or shreaded apart
          1-2 2lb bags of dried pinto beans soaked overnight in water
          1 rotiserie chicken from super market (I shread the meat up into chunks, pulling out bones as i go)(you can also use any leftover meat you have available)
          pinto bean seasoning (found in spice Isle or on the mexican foods isle)

          Start by cooking the bacon / onion / garlic / celery in a huge pot.
          once rendered down then add the water (doesn't matter how much, just enough to have room for things to move around when boiling)
          add the beans, carrots, seasoning boil on high for quite a while (I think about 2-3 hours)
          be sure to check the water level and stir occasionaly
          for the last 45mins-1hr add in the cilantro and tomatoes and salt/pepper to taste.
          If need be add more water
          Dish up (I cooked a batch for me and my wife, we ate it for 2 weeks, seems to keep well in the fridge)

          I have added frozen ocra occasionaly and it seems to do really well.

          Sorry for the long text, just more of a pot-luck when I cook beans.
