    Turkey Broth Recipe?

    I fried a turkey for Thanksgiving, took the carcass along with celery, onion and other.
    Boiled it for a couple hours then stuck it in the freezer.

    Now I have it thawed out and I am looking for a couple recipes that I could use this for.

    In future, don't boil the stock, very lightly simmer it. Preferably for 6 hours by itself, then add veggies, spices, and herbs for another 2 hrs.

    Now for an easy recipe to use it: chicken and dumplings

    Saute equal parts onion, celery, and carrots (all chopped) in quite a bit of butter (I use schmaltz I skim from my chicken stock) until they soften a bit. I'd suggest adding spices and herbs to the saute as well; like thyme, sage, parsley, pepper, and salt. Use more than you think is necessary.

    Sprinkle flour over it (equal to how much butter you used to saute veggies) and mix it up for a minute or two.

    Pour in your stock until you get the desired amount, and add chopped up chicken (cooked). Bring it to a boil.

    Throw in a bunch of frozen peas, and a roll of pillsbury buttermilk biscuits (each biscuit cut into 9 pieces).

    Put a top on it, set it to very low temp, and cook it for 15 minutes.

    You'll notice I really don't use measurements. Sorry, that's how I cook
