I always keep a dozen or so ribs away from the bbq sauce for tacos.
Sauté a couple of diced garlic cloves, diced onion and Serrano pepper in olive oil and add deboned rib meat. I normally add some pico towards the end.
Heat up some refried beans and put desired amount on a tortilla of choice.
Add some Queso Oaxaca and the meat mixture and heat the tortilla on a skillet, air fryer or the oven.
