not sure which recipe you picked, but this is how I do it.

    1# pinto beans
2 ham hocks or link of your favorite sausage
1 can of rotel (mild medium or hot, your choice)
    1 can of chicken broth
    1 onion chopped
    1 bell pepper chopped
3 table spoons of williams pinto bean seasoning
dump everything into a crock pot, add water til ingregients are covered by about 1" of water.
cook on high for 8 hours or low for 10-12 hours.

From Soups - Sides - Salads

Easy Pinto Beans by Dan Marcasol (Skeeter)

      1 pound pinto beans
      2 ham hocks
      1 can rotel
      1 can chicken broth
      1 chopped onion
      2 bell peppers chopped
3 tablespoons of Williams Pinto Bean Seasoning

Dump everything into a crock-pot. Add water (about 2 inches above beans), cook on high for 8 hours on low for 10-12 hours. Check occasionally and add water if needed.

Have you ever tried the Williams Cajun Season. I have been using that for 25 years as my always goto seasons.
