    Haven’t seen anyone mention cucumber.

    Fish/shrimp/scallops
    Lime juice
    Small amt of orange juice
    Tomatoes
    Jalapeños
    Cucumber
    Avocado
    Red onion
    Crushed garlic
    Cilantro
    Salt and pepper
    Tiger sauce to taste
Sometimes I’ll add red or yellow pepper

    Serve on tostadas.

I love Ceviche. My recipe is much like those listed. There is a resteraunt close to me that puts diced cucumber in theirs. Surpisingly it is really good.

1 lb fresh bass cubed about 1/4 inch cubes (or fish of choice)
1 cup lime juice from 6 limes

Soak fish with enough juice to cover in fridge for about and hour. Stir couple times

While fish is soaking mix in large bowl:

        1 Pablano Diced
4-5 roma tomatoes seeded and diced
1 med size red onion diced
        1/4 bunch cilantro chopped
        black pepper to taste
        Sea salt to taste
        1/4-1/2 cup clamato juice
1-2 tsp Louisiana Jalapeno Hot Sauce
1-2 tsp Cholula Chipotle Hot Sauce

Drain off lime juice off fish after one hour and add together... Enjoy

But the red snapper and rainbow runner were my favorite.

          About 11/2 lbs snapper
          6 limes
          1 orange
          Red onion
          Jalapeño
          Bunch of cilantro
          3 Roma tomatoes
          1 avocado
          Good pinch of Mexican oregano
          Salt/pepper

Let fish cook in juice at least 3 hours, have all other goodies prepped cold and ready to go and combine. Enjoy
          This.

            I’m so hungry now!!!
Is it ok to use frozen fish or does it need to be fresh?
            How would flounder be?

This. Avocado and cucumber added after the citrus turns the fish is outstanding. Gives alternate textures and provides smooth "cool' flavor.

I did some last weekend. I did 1.5 lbs of shrimp and 4 filets of tilapia.
                Fresh lime juice
                Half red onion
                Cilantro
                2 tomatoes
                2 cucumbers
1 small jar of chopped jalapeños
                Black pepper
                Sea Salt
                Worcestershire sauce
                Maggi sauce

Let it sit on refrigerator for 1.5 hours

                Avocado is added when serving

I keep it simple but use all fresh ingredients.

                  Love using trout
                  Fresh lime juice
                  Cilantro
                  Avocado
                  White onion
                  Jalapenos
                  Roma tomatoes
Every now and then I'll add some cucumber.
                  Salt and pepper to taste

That's the way I eat mine, you can eat your ceviche however you want.

                        Quick search shows:

What fish is safe for ceviche?
Freshwater fish, including trout. Tuna and Salmon (too oily for ceviche, even though they're safe to eat raw).

Here's a list of common types of fish that are typically considered safe and work well in a ceviche:
                        Bass.
Corvina (arguably the most popular for ceviche)
                        Tilapia.
                        Snapper
                        Cod.
                        Halibut.

I wonder what it is about tuna being oily makes it bad for ceviche. We use fresh tuna for ceviche all the time. One of my favorite ways to eat tuna besides poke.

Pretty much this but I add a shot or 3 of Tequila and sometimes a seeded chopped cucumber.

Those were results of a quick google search. I might give it a try with tuna. I have only eat ceviche made out of tilapia, bass and snapper but there is always room to taste new recipes.
