    Brisket size

    What is the smallest brisket that you would cook? What are the drawbacks to smoking a smaller brisket?

    Folks smoke flats all the time in the 4-5 lb range. The only drawback to smoking a small brisket if you know what you are doing is ......there are no leftovers for brisket nachos, brisket tacos or brisket chili.....

      I don't even know, I am a sucker for a giant brisket when I see it on the meat aisle.


      Smart, do you have some algorithm that alerts you if the word Brisket appears on TBH?

          LMAO....I try to avoid all the mask, vaccine and pace threads in the ATC. Brisket in the title is usually a safe bet...

            At over $3.00 a pound mine be be smaller.

            But I have separated the flat from the fat on the last 2 and both turned out great...

              Can you just purchase the flat at a grocery store or do you need to go to a meat market?

                Ive seen flats before but not a super common item that I see regularly. Small ones just need a little more attention so you don’t overcook and less cook time means less beer drinking.

                  I actually look for those 9-10 lb. briskets. They trim up nice make for a shorter cook.

                        I like to small flats. I do two one for me and guests and one for me only. See Smarts post tacos and such.

                            I’ve smoked deer briskets before. Can’t get any smaller than that. Of course I will put them in a crock pot the next day and cook until tender enough to eat. Actually will cook on low in crock pot all day until they are very tender. Some good eats!

                              Yep 10-12 is what I look for
                              Cooking time is doable and feeds a lot of folks
