Made 88lbs of summer and 20lbs of deer sticks today.

Tomorrow is link day. I may make more deer sticks. They turned out pretty good. Waiting on the summer sausage to hit 155’ now. Almost there.

What casings did you use for the sticks? Everytime I’ve tried it they were tough and I had to peel the casings off. Also, what seasoning did you use for the summer sausage?

Nice . . . I ground my last batch of Burger last night, next 3 or 4 deer are going to go to Sausage. Told my boys if they want sausage this year start popping off some does, 1 has 4 tags the other 3 tags left. Going to be busy week after Christmas ;-)
