    Smoked Venison Chili

    Good day to get chilified.

    2 lbs of venison burger meat (ground fresh yesterday)

    2 diced bell peppers
    1 diced white onion
    3 chopped jalapenos (remove seeds and insides if you're a Yankee)

    2 packs of Williams chili seasoning

    1 29 oz can of tomato sauce

    Add water to your preference. I like it thicker but wife likes more juice.

    Sauteed all veggies after chopped. Add a little oil while u do this.

    Brown meat/seasoning about 75% done in a dutch oven.

    Add veggies, tomato sauce, water.

    I'm using a Rec Tec pellet smoker on 200.

    No lid on dutch oven (obviously).

    Stir every 30 minutes. It will eventually start simmering.

    Taste it and see if there's enough smokey flavor for you. If so, put a lid in it and simmer for 2 hours.

    If not, let the lid stay off and simmer, continually tasting every 30 minutes.

    Serve with cheddar cheese crackers, and Tums.

      Man that looks good.

      We were planning on doing a couple different batches next weekend, one with beans and one without. Most ingredients are similar though I’m using some Hatch Chilis instead of jalapeños and also some Ragin’ Blaze chili seasoning.

      Also have some lean venison chili meat leftover from an 8 point I took last year. Going to toss the venison burger and chili meat on the Pit Boss to smoke and then basically go the same route you mentioned.

                              THIS !!!! Last 25 yrs, this is my silent prayer as well. Like right now....beginning to feel that drier 'crisp' in the air, and know its close to time for venison chili.
