I have been doing various versions of these for the past few months and can't get enough of them.
Ingredients for 6-8 Pies:
1 Can of Buttermilk Biscuits (8 Biscuits)
1 lb of meat (cubed chicken, hamburger or link sausage)
1 Cup shredded cheese or 12 pieces of cubed cheese
1) Season and cook meat as desired
2) Roll out each biscuit using a rolling pin. Use flour on pin to keep biscuit from sticking. You want the rolled out biscuit to be 6-8" in diameter.
3) Put a pile of meat in each rolled out biscuit along with some cheese
4) Pull together the edges of the biscuit to make a ball.
5) Crimp the top of the ball to seal it off. Don't worry if it wants to open up a bit. A tight seal is not necessary
6) Bake biscuits according to instructions
Allow to cool slightly and eat with hot sauce of choice.....
Note: I think almost any meat along with veggies, cheeses, rice, boudin, or other filling will work just great.
