If you dont mind driving a little, Schneiders Deer Processing in Fredericksburg is great. Real clean and a good dude. We've taken our meat there for many years.

Just a little insider info about Hudson Meat Market. I run the new location for Hudsons out in Marble Falls. Hudsons and Klein are no longer under the same ownership, we still work together and produce product for eachother to give all of our customers everything they want.
First thing first; we DO NOT mix species, if we have to combine animals for ground product we will only use the same species. With exotics, you get your meat back no matter what.
secondly; most of the time you do get your own meat back. each animal is cut individually, and depending on what the customer is wanting depends on how much of his own meat he gets back.
example: say customer 'A' brings in a healthy large doe, typically we can get anywhere from 40 to 60 pound of raw meat out of them (depending on size) now if customer 'A' wants the deer steaked out and everything just ground into hamburger, he meets the requirements for us to get him back his own meat. even if he wanted 1 or 2 different sausage flavors instead, he will get his own meat back. Because he isn't wanting a little bit of this and a little bit of that, his meat will stay separate from everything else.
Now lets look at Customer 'B'. This guy comes in with, lets say the same amount of meat as customer 'A', however this guy wants 5 pounds of every single ground product we make. With our machines, there is no way possible to run a batch that small. the product wont even go through the machine.
I hate to be there bearer of bad new here, but any processor that tells you that 100% of the time you get your own WT ground product back, is just straight up lying. unless they are doing less than 100 deer a year and run tiny machines.
When you come to Hudsons, you're coming to the largest deer processing facility in the state. We did over 11,000 deer at the ATX location alone in the 2018-2019 season. there is just no way possible to keep turn around times low, while running everyones 5 pounds of product separately.
At Hudson's, we take a lot of pride in everything we do. We've been around for 50 years in this game, and business is just continuing to go up. Processors from around the state have come to us looking to have us buy them out, we are just that good at what we do, and people trust us. Everyone has their own favorite place to go, there are good and bad stories to come out of every processor in this great state. Its hard to judge them all without knowing truly what goes on behind the cooler doors.
Just know, never be afraid to ask us questions at Hudsons, we are an open book and will tell you everything you need and want to know. And if you decide we aren't for you, we will help you find the right place. At the end of the day, we love this industry and the people that it brings in.

I also use Kleins in Pville for Hard Salami but they are not open in summer.
As for Brezindines.. HELL NO- Took them 2 complete quartered big axis. So that is 4 backstraps, 4 tenderloins and 8 legs. Had steaks made of the backstraps and tenderloins, then had burger made with rest. When they called I ran over to pick it up that day. Lady handed me 1 Paper bag with meat about 3/4 full, then a second one rolled down to about 1/4 full. I took them to the truck then came back and asked where the rest was, they said that was all. I said for 2 complete deer. I bet there was not 30 lbs of meat total. I told them that this can not be correct, they said i was just confused because 2 deer does not make as much as one would think.
I left ****** and out of over 220 dollars. Got home and started inventory on what was in the bag. Maybe 2 backstraps worth of meat and 1 tenderloin. Then had about 20-25lbs of burger. Total BS. I was told by others never Take Axis to them cause the lady loves her some Axis. This was summer axis so they did not have much in there but my animals.. My guess is I lost a whole axis buck to them.

Bug spray was landing on all of the animals. Never went back. I take great care of my meat and don’t want it mixed with someone else’s that had one bag of ice in its chest and had a 5 hour drive in the back of a truck.
