    Saturday Fajita Dinner

    We haven’t been able to find flank steak at our H-E-B. Just pre-marinaded skirt. I like that but I wanted some flank steak fajitas. I ordered 4 flanks from Creekstone Farms. Got them yesterday and got up this morning and made a simple marinade of lime juice, oil, garlic and fajita seasoning. It called for cilantro but all I had was some chimmichurri my wife made the other day so I put a spoonful of that in there.

    Tried smoked queso for the first time. Won’t be the last. The flank steak was very tender and flavorful. I don’t know why I can’t lose any weight???

                          Honestly I’ve seen a bunch of pics on cooking forums and Facebook so I just kinda made something close. It’s just me and the wife, so didn’t want to make as much as all the recipes called for. Half pound of wild hog, ground and browned with some taco seasoning. Half a log of Velveeta, can of rotel, quarter of finely chopped onion, scoop of cream cheese and a finely chopped habanero from the garden. Smoked for 40min at about 350.
