                Not the keto really but the tenderizing part.

                    Not an acid but an enzyme. Here's the science behind it
                    Raw fruits can be used to tenderise meat before cooking because they contain enzymes that break down proteins.

                              Enzymes? Looks like mold, you should probably call in a hazmat team. If you scrape them off quick and use a rosebud on them, you may be able to salvage them! You are in East Tx, right?
