I freeze all my catches in water as well. Freezer ziplock & get all the air out.

I've used badly freezer burned meat for stews and soups in a pressure cooker and you couldn't tell the difference from fresh meat.

Maybe the guidance is for regular freezers as opposed to deep freeze?
Those times seem awful short and my experience is consistent with those who have eaten 3-4 year old venison and couldn't have told a difference.

I cooked some vacuum sealed breakfast sausage that was 3 years old the other day. tasted great.

Like everyone else as long as it's packaged properly I go by smell and look instead of age

Ya.... Bacon 1 month? Hail, bacon never goes bad in the freezer!

If it is vacuum packed it could last for years

I go through a lot of meet, but if it stays in the freezer 2 years I toss it.

I'm thawing axis ground meat from 2017 for spaghetti tonight.

Eyes and nose test should be the primary route IMO. As long as things are vacuum sealed correctly meat will last for years
