I wasn’t a fan of either, but his boudin seasoning is one of the best.

I used Granzines the other day for the first time. Great base for any smoked sausage. We did chipotle/cheese and used the Granzines for the base. Pretty darn good. I use LEM for summer sausage/snack sticks usually. Add jap/cheese. Other than that, I use Smart's approach. Just salt/pepper/garlic.

Bobby Moseley inc (my dad ). He buys seasonings around and had over the years tailored a blend that suits us just fine. Measures it out with scale as he don’t mess around. Only experimenting we have done in past 10 year old as add heat. Started with red flakes , moved to live japs. Was perfect one year and too hot next. Jap flakes more consistent but he personally prefers consistency of red flakes Which I think to agree with with.

Got A C Legg seasoning off Amazon this year. Hot Pork 109 blend. Turned out great.
