    Times on smoking chicken

    I am going to smoke some briskets this weekend. Thought about throwing some leg quarters in the back of the smoker at the same time. What kind of times am I looking at with chicken legs and quarters. With temps around 250

    I usual smoke whole chicken halves for 4 hours at 225 degrees.

      for quarters an 1 1/2 give or take. They will start to pull off the knuckles when ready.

            the best way to tell when your chicken is done is to give the leg bone a little twist, if the bone twist at the socket its done

                I rarely cook by time anymore. I have several meat thermometers and pull it off 10-15 degrees before my final temp and let it cook the rest of the way off heat. Comes out perfect every time.

                  i have one pit made from a old air compressure. thats all i use it for. chicken. 2.5 to 3 hours. thighs. when the bone almost pulls out with very little tug.
