Got up at 0400 and started getting things ready to put a rib roast on the smoker

Put it on at 6 so should be ready by 1300 at the latest

We made the gumbo yesterday. Just gotta add shrimp and crab around noon. But wife is in the kitchen making enough noise to wake the neighbors. So much for sleeping late

I have enough red chile pork in Dutch ovens for 20 dozen tamales going in. I have everything prepped for one tray of green chile enchiladas and one tray of red chile enchiladas. Smoked corn soup is in the crock pot.
