      I have made it with crappie and white bass. Very good with either. The restaurants I have it at use tilapia.

        I make mine using a mixture of hot peanut oil and fish batter. Turns out great everytime.

          We ate it fresh on RC at the get together! It was great! Florida people was in charge of making it so who knows we might all have worms now.

                Love me some ceviche. Just me, but I stick with only using offshore fish; i.e. snapper species, mahi, etc. I'm not making ceviche out of anything from a lake or inshore bay system.

                    Not that much difference in fresh and saltwater fish when is comes to worms. Actually more bacteria and algae risk with many saltwater fish. To be "safe" all fish should be frozen at minimum -4 degrees for 7 days or -35 for two days.
