    Dried out summer sausage?

    Thawed out a roll of summer sausage last night and the outer 1/8” was extremely tough/dry. Is there a way to “hydrate” this and make it taste better? I’ve got about 8 rolls left and would hate to think it’s all no good. It’s been in the deep freeze since January, the roll I thawed out 6 weeks ago didn’t have this issue.

      Is it freezer burned? What was it packaged in prior to freezing(vacuum sealed or butcher paper or?)?

        It was done by a processor, wrapped in butcher paper and sealed tight. I dont see any discoloration or burn on it, its just dry and tough on that outer ring

          When I have that type of issue, I put the sausage/buck sticks in a plastic bag with a wet paper towel and leave it in the 'fridge for a week and check. May have to add a bit of water to the towel and let it set a little longer.
