So I drive 400-500 miles a week for work and will be doing monthly trips to Colorado on top of my work driving for the next 2 years ( 1000mi there and 1000mi back ). I drive a Tacoma and get an average of 17-18mpg. Was thinking of buying a good high mpg car any suggestions ??? Not sure if it’s worth the cost of a additional car , thoughts ???

If you get a commuter car at least get one thats fun to drive. Mk 7 VW GTI. If you want to smile ear to ear every day get the APR stage 1 tune.
edit: i see you're going to CO, you might want to look at the Subarus. The Crosstrek might meet your needs, gets good mileage with AWD.

That’s what I commute in. 6 years 170k miles later and haven’t done anything but drive it.
Gets over 30 miles to the gallon. If I had to buy over again I would probably buy a Corolla.

There are a lot of things to consider. An extra vehicle equals more insurance, registration, and maintenance. Even with all that, I have a commuter car and it works fine in my situation. I have a f250 long bed and that is a bit much to park everywhere and not to mention worry about getting broken into. My commuter car is a 2018 corolla I bought slightly used which parks easy and gets great gas mileage. My truck is for towing and weekends and gets 13-14 mpg. My car gets daily use and 36-38 mpg. At the end of the day are you saving a ton of money probably not, but I would rather rack up the miles on a corolla than a super duty.
