    whole hog marinade

    I posted this in the recipe section, but thought it might get more looks here.

    I have about a 50lb wild hog skinned and whole. I want to marinade it in an ice chest full of something good before cooking it. I had buddies in college that would do this with deer, but don't remember what the marinade was made of. I'm thinking some wine and oranges, and other liquids, just not sure what all would be good. Anyone done something like this before, any suggestions?

    Coke and orange soda for marinade. My favorite is to skip the marinade but rub the whole thing down in peanut butter.

        I did a brine on a couple hole hog we smoked. Worked great rancher said it was best wild hog he every tasted.

          I’ve always just injected the **** out of them with Tony Chachere’s injectable jalapeño butter and stuff with cloves of garlic. Use a little injectable butter as a binder for your dry rub.

              We never brined a whole hog, we usually just injected the crap out of them with a simple mixture (listed below) and then seasoned the pig extremely liberally with kosher salt. This was done about 1 hour prior to putting it on the pit. Of course these were farm raised hogs.

              Pork Injection (makes +\- 1 gallon)
              8 tablespoons coarse kosher salt
              4 tablespoon dark brown sugar
              4 tablespoon Worcestershire
              8 tablespoons apple cider vinegar
              4 cup apple juice or cider
              8 cups chicken stock (2 boxes)
              4 cups water
